Saw the picture on screenshots, but can't find how to actually do it...

You can generate the sound enveloppe by selecting the "File/Process video" menuitem, then using the "Sound enveloppe" processing filter. It will generate a new "Sound enveloppe" annotation type. Note that in Advene, the sound enveloppe is basically an annotation containing numeric values, rendered as bar graphs.
